It's grilling season!  I think I'll marinate some chicken in olive oil, fresh lime juice, fresh garlic, and fresh basil.  Maybe some pepper, too.  I haven't tried this concoction before, but it seems like it would be delicious.

I wish I had some fresh garden zucchini to grill.  That's one of my favorites.

What are your favorite marinades?  What do you like to grill?

I like grilled corn on the cob with olive oil, garlic, onion, nutmeg, salt and pepper.    I also really like salmon grilled on a cedar plank with white wine, lemon and fresh rosemary.

Right now what I'm really interested in getting into is cooking over an open fire... since we have this awesome fire pit now.  I'm talking about real fire cooking, not the icky dutch oven recipes that people do using mixes and cans of stuff.   I want to cook lamb spit roasts and flat breads and I want to feel like Robin Hood dancing about the forest with a roasted bird leg in my hand.

Asparagus braised in garlic butter and fresh squeezed lemon or lime.

I've gotten into various marinades, mostly the McCormick varieties, though I'll likely start experimenting soon now that I'm getting a taste for them.

I also enjoy putting the steaks on the grill and simply sprinkling on Worcestershire sauce and ground pepper.

I love making stuffed mushrooms and putting them on the grill.  Also taking a red onion, splitting it almost all the way through in 4's... then pouring olive oil in the middle, and crushing up fresh herbs (my favorite being rosemary, thyme, and oregano) and stuffing it in the onion, and then wrapping in foil and putting on the grill for 50-60 minutes while it's warming up and cooking everything else.

Then just pull that bad boy apart and put it on top of your steak... mmmmmmmmm

Replace the oregano with parsley and sage, and you not onyl have a delicious recipe, but a darn good song.
