I think there is a lot to be said for both breasts and thighs. And this applies to chicken as well.

Yes, it was an obvious joke, but I figured someone had to say it and it might as well be me.

Thank you, Spiker, for putting this thread back on topic. This is a very good topic on the subject of healthy (in other words, not fried in fat) chicken recipes (that was succeeding in making me very hungry as I read it). As this board's moderator, PtP, is currently very busy in medical school, I'm using my global moderator powers to fix this little debacle.

First off, I'm deleting all the rants and snips regarding the vegan debate. Ashwgrl, if you want to post your link again on the unhealthiness of chicken, please do so in a separate post.

Now... I just need to clear something up before we go back to discussing yummy chicken recipes...

You are free to post whatever you want on this site, and so long as it isn't spam, I'm not going to stop you. However, inasmuch as you have the freedom to post whatever you'd like on this site, so too does everyone else have the freedom to disagree, debate, and poke holes in whatever it is you have to say. If you're going to stand on your soap box, expect someone else to kick it out from under you. I would hope everyone would learn something from such a debate, but often it degenerates into name calling and pissing and moaning. Which is fine, that's just a cue for us moderators to lock the thread.

Secondly, check the logo at the top of this page. This is no longer PA. This is Backstage Utah. New site, and new sheriff. Do not f*** with me.

Alrighty, back to discussing yummy, healthy, chicken recipes!

OH... another one I just remembered...

Brown some cut up thigh meat and brown with olive oil and whatever herbs you like.  I usually use rosemary, thyme, oregano, and pepper.

Then cut up some steamed asparagus, and add to the chicken, and then I stir in about a 1/2 cup of milk with some cornstarch to thicken it up, and let it simmer until it's a thick, saucy consistency... then serve over egg noodles, or grilled squash/zucchini...

It's super good... sorry I don't have a more detailed recipe, but I made it up many years ago, and it ends up slightly different each time I make it.
