Suggestion Needed: Easter/Fertility Desserts (Read 216 times)

I'm in charge of the hot cross buns and the dessert this Sunday. I volunteered for the hot cross buns because the name always makes me snigger... just like spotted dick does.

But what to make for dessert? The only traditional Easter dessert I've been able to find is wheat pie (Italian ricotta Easter pie), which I am fascinated to try, but not sure it will appeal to the 20+ guests at the dinner.

What are your favorite Easter/fertility/spring desserts?� �Any suggestions?

Lemon-y desserts are very spring-ish to me.  Lemon meringue pie, lemon bars, lemon tarts.  That said, I'm making coconut cake this year.

I was wondering about coconut and why it is associated with Easter.� The only explanation I can find is that it looks like the grass people put in Easter baskets.� I love coconut AND lemon, so both of those are good suggestions.� I wonder about strawberries.� What can I do that is new with strawberries?� (I'm thinking "new" because I need something for my blog this weekend)  Hmmm.  Lemon tarts.  Strawberry lemon tarts, maybe?

Yeah, people dye coconut green and use it as grass on cakes or use it as fluffy fur (I guess) on lamb-shaped cakes.  My mom used to do the grass thing, which is why it makes me think of Easter, but I'm not using any dye--I'm toasting the stuff that goes on the outside of the cake.

Anyway, I think strawberry lemon tarts sound delicious!

I just realized I haven't gone past the holiday candy aisle in the grocereteria for a while now.� I'MMA GON' MISS ALL THE GOOD CANDY!

Now fer serious - my grandma always had some Mississippi Mud on hand for Eastertime.� So rich just the smell will make you full.

Ahahahahaha!  That slays me.

And now I have leftover coconut custard.  Which I was thinking I could use to make a tropical fruit tart, but could I?  Pineapple is too juicy to use in a tart.  And nobody in my family (including me) is particularly keen on either mango or papaya.  Would coconut custard work in a fruit tart with strawberries and kiwi and an apricot/coconut rum glaze?
